Instructions:

  1. Cook the soba noodles according to the package instructions. Drain, rinse under cold water, and set aside.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced onions and julienned mixed vegetables to the pan. Stir-fry for 2-3 minutes until the vegetables start to soften but still retain their crunch.
  4. Push the vegetables to one side of the pan and add the cooked soba noodles to the empty side.
  5. In a small bowl, mix together the soy sauce, oyster sauce (if using), tomato ketchup, sesame oil, salt, and pepper. Pour this sauce over the noodles and vegetables.
  6. Toss everything together using tongs or chopsticks, ensuring that the noodles and vegetables are evenly coated with the sauce. Stir-fry for an additional 2-3 minutes.
  7. Taste and adjust the seasoning if needed. You can add more soy sauce or salt according to your preference.
  8. Once everything is well combined and heated through, remove the pan from the heat.
